Comfort Food - Chicken Pot Pie


Have you ever fallen in love with an entire family? I have. Today's recipe is from one such family - The Arsenaults. Paul and Joelle are an awesome couple with incredibly adorable children. Their daughter, Erin, was the flower girl in Shannon and George's wedding and did an excellent job! I was fortunate enough to have their son, Kyle in my pre-school class several years ago and was privileged to see his adorable smile and hear his sweet voice four days a week. Anyway, we just loved spending time with them, sharing our faith and doing a lot of laughing, until the punks up and moved to New York. I was going to handle their move by never speaking to them again, but I just love them too much, darn it! All of them put recipes in Rebecca's cookbook and last week I decided to make Paul's Famous Chicken Pot Pie. I'm not much of a fan of pot pies because I am a child and don't really like my foods 'touching each other.' However, this was pretty good and super, super easy and Sterling thought it was yummy! :-)
Here's the recipe:
Paul's Famous Chicken Pot Pie
1 pkg. of 2 refrigerated pie crusts
1/3 cup butter
1/3 cup choppped onion (I used minced onion)
1/3 cup flour
1/4 tsp. salt
pepper to taste
1 1/2 cup chicken broth
2/3 cup milk
3 cups cubed or shredded chicken
2 cups frozen mixed vegetables, thawed
Heat oven to 425 degrees. Prepare pie crusts according to package directions. Use a 9-inch pie plate. Melt butter in medium saucepan over medium heat. Add onion and cook until just tender. Add flour, salt and pepper, stir until well blended. Stir in broth and milk, cooking and stirring until bubbly and thickened. Add chicken and mixed veggies. Mix well. Spoon mixture into prepared pie crust. Top with the second crust, seal the edges and flute. Cut slits in a couple of places on the top crust. Bake for 30 to 40 minutes or until crust is golden brown. Let stand 5 minutes before serving. Makes 6-8 servings.

Oh, I should probably mention that my crust did burn a little on the edges. I NEVER make pie, so it wasn't surprising. All in all: easy, tasty, who could ask for anything more?

Not only do I Love and Miss you but I Love your blog....and I'm so glad you liked the pot pie, even though the food does have to touch!! Will be home in June. Let's try to get together!

Short-cut...Use cream of chicken soup. Either way makes a hearty dinner with little effort and looks like you spent time slaving in the kitchen.

Cover the edges, and just the edges, of the crust with foil when you put it into the oven. It will cook, but not burn,
