Faith, Friends and Following Through

Yes,it has been almost two months since my last entry and yes, I did say I was going to cook and blog once a week. However, if you recall from my very first post, I also said that one of the reasons I was doing this blog was to challenge my lack of follow through on things. Now, to most of you it may seem like I have failed. But in my mind, the fact that I am still trying is a huge accomplishment for me! Usually, by now, I would have just said, "Forget it! Clearly I am not going to get through this cookbook and I am a failure at blogging!" But instead, I am pressing on. So, if you've gotten tired of waiting and have given up on me, I understand. I will press on for my own sake.

This weekend, I got to spend some time with these lovely ladies:


We laughed, talked and shared our hearts about our lives as Christian women. Well, mostly they did. I slowly but very surely succumbed to the cold virus that was taking over my body and had to call my wonderful chauffeur and ask him to come get me on Saturday evening. It was very depressing because I love spending concentrated time focusing on God's word and growing alongside my Christian sisters. Anyway, before I headed down to Ocean City on Friday, I baked some super, super easy little cookies. This recipe comes from Sally Bierman who is NOT known for easy recipes, so if you want to make just one thing from her, this might be the way to go.

Peanut Butter Cup Cookies
Line mini-muffin tins with cupcake paper. Fill about 2/3 full with refrigerated chocolate chip cookie dough. Bake at 350 degrees for about 10-13 minutes. Immediately press mini peanut butter cups into finished cookies. (I put mine in the freezer to firm up for about 10 minutes.)

That's it! Soooo sweet! You really only need to eat one to get your sweet fix (but that didn't stop me from eating 3 or 4, or 5, or 6.....

I didn't realize those were your cookies. I ate quite a few of them. There was one lonely one left on Sunday morning, so I thought he should join his friends in my belly. Yum.

And haha, kids, those cookies I sent you were just packaged peanut butter cookie dough mix, with some milk chocolate chips stirred in! :-)
