Autumnal Joy


Every year about this time, the inevitable happens: summer ends. And it makes me feel awful, depressed, like crying, like moving to a warmer climate....you get the picture. I hate winter. I'm sorry. I probably didn't express my passion quite strongly enough. Let me try again. I HATE WINTER!!!!! What keeps me sane in these transitional months we call Autumn? Colors and smells mostly. Mums, apples, jeans, sweaters and the promise of wonderful things to come: Boots. That's right - boots. Oh how I love boots!!! But this is a cooking blog. And one of the other things that Autumn brings? Pumkins! Their bright, happy color and shape makes the closing of the pool somehow more bearable. With this in mind, I decided to make a recipe called simply "Pumpkin Chocolate Chip muffins." This recipe was submitted by Liz Contarino, who I used to work with. Liz is the mother of six, so she knows her way around the kitchen! These muffins were simple to make but I didn't like the way the ingredients were set-up so I changed them around to make it even easier for you! :-)




Pumpkin Chocolate Chip Muffins


1 2/3 cups flour


1 cup sugar


1 T. pumpkin pie spice


1 tsp. baking soda


1/4 tsp. baking powder


2 eggs


1 cup pumpkin


1/2 cup melted butter


1 cup chocolate chips


Mix flour, sugar, spice, soda and powder. Separately whisk (I used my electric mixer) eggs, pumpkin and melted butter. Stir in chocolate chips. Add flour mixture to pumpkin mixture. Mix. Pour in paper-lined muffin tins. Add extra chocolate chips to top of batter, if desired. Bake at 350 degrees for 20-25 minutes.




mmmm....muffins, chocolate. I just might make it through another Autumn. Now, where are my boots?

Those sound SO good! I hope you and Dad enjoyed them! 2 Questions: what is the difference between baking soda and baking powder? and what is pumkin pie spice?

Hi Becs! I don't really know the difference between baking soda and baking powder but I know they cannot be used in place of each other!! Baking soda fizzes when it comes in contact with liquids. I believe it is what makes cakes and breads have a bit of 'fluffiness' to them in the absence of yeast. I'm not sure what baking powder does.
Pumpkin pie spice is just a spice, found in the spice section of the baking aisle. Like most spices, it is NOT CHEAP!

and...

muffins are notorious BAD travellers. Sorry, maybe I'll bake some cookies soon....
