Being Me!

Ahhh...well, it took me 4 whole recipes until this moment. The moment when I start cooking before I realize I don't have all these ingredients. The moment where I say, "Oops! Guess I'll just use this instead!" Happily, this was a very forgiving recipe that left a lot of room for options and was delicious despite my total inability to follow directions! :-) This recipe came from a lovely lady named Kathy Fiola. I met her when I had her kids in preschool. They are both incredibly adorable and she is such a nice lady! Some of her recipes are a little challenging, but this one was easy.

Kathy's Beef Stew in Crock Pot
Can of golden mushroom soup
Can of tomato soup
Beef cubes
Potatoes
Onions (oops! Forgot to get an onion! Guess minced will do!)
Celery
Carrots (Dang! I thought I had carrots! Guess shredded will do!)
Spray crock pot with Pam and add soup with no water. Add raw meat and mix. Top with vegetables. Cook for 8 hours on low or 4 hours on high.

This was so darn good! My husband and I couldn't help but think about how good it would have been with REAL onions and carrots. Darn me.

The little crazies will be here this weekend, so I don't think there will be too much cooking going on. Though I might try to do a cookie recipe with them. We'll see.....

That must be inherited because I do it ALL the time:)

Start without the ingredients? Definitely inherited, because I have it too. Well, inherited or contagious.

Thanks to KRISTY, not an official Minter, I find out you have a blog! I like it a lot, and will probably try some of the recipes. A teensy bit feeling left out of the loop, though! :-) Love, Lin
