I love sweet potatoes. I ate some today, in fact. I like them no matter how they're cooked. Today I had a baked sweet potato with some butter and a little cinnamon and sugar. Clancy's serves sweet potato fries - mm,mmm. But perhaps my favorite way to eat sweet potatoes is this delicious casserole. Shannon and I make this all the time and it has never disappointed me. I've made it twice recently - once for Thanksgiving dinner and once for Christmas Eve dinner. It's another one from Joanne Callahan, so you also get to read her adorable narration. :-) Enjoy!
Sweet Potato Casserole
You will enjoy this recipe as a wonderful side dish with chicken, ham, turkey, etc. It is the perfect special side dish for a home cooked meal or to take to a potluck, etc.
Mix the following ingredients all together in a lightly greased casserole dish:
3 C sweet potato (either 5 medium, or 1 large can plus 1 small can of canned yams or sweet potatoes - sometimes I just use 2 large cans 'cause they're cheaper - it works just as well.)
1/2 cup sugar
1/2 cup butter
2 eggs beaten
1 t vanilla
1/3 C milk
Topping: 1/3 C melted butter, 3/4 cup brown sugar and 3/4 C flour. Mix these together and put on top of the casserole. Bake at 350 degrees for 25 min.
Make this soon. You won't regret it. I promise.
